3 ingredient dinner -Easy, healthy, fast, wholefood & plant based

I have been obsessing over this dinner lately and I wanted to share it with you! After starting school again and getting back to the busy routine & college-life I have been trying to make some easier recipes, that are healthy and budget-friendly and wholefood based!  My main staples lately have therefore been oats and quinoa, so budget-friendly versatile and healthy!

 

3 main Ingredients:

Mushrooms

Zucchini

Quinoa

 

Optional toppings

Cashews

Tahini

Garlic

Coconut aminos

Hempseeds

Salt,  pepper, chili flakes

 

All you really need for this recipe is Quinoa, Mushrooms, and Zucchini -but if you want to you could add one or all of the optional toppings for some extra taste and texture. Start with boiling quinoa ( 1 part quinoa to 2-2,5 parts water ) until the water has cooked away and the quinoa is popped open revealing the germ of the kernel. Then fry the mushroom in a pan with some salt and olive oil (option to add garlic and coconut aminos – this gives a very nice taste to the mushrooms so if you have the chance I would try it! ) & let them cook until soft and golden. Thirdly, shave the zucchini/ cut it or use a spiral cutter to make zoodles. Assemble into a bowl and enjoy!  (If you want to, now is the time to add some cashews, tahini, hemp seeds, and chili-flakes to add some extra crunch and texture) –  I hope you enjoy this dinner as much as I do!  I would love to hear from you if you try the recipe &  hear what you think of it! <3
